Shepherd’s pie

Shepherd’s Pie is a hearty, traditional dish that has warmed the hearts and homes of families for generations. This comfort food classic combines succulent minced meat, often lamb, with a medley of vegetables, all nestled beneath a fluffy layer of creamy mashed potatoes. Ideal for any occasion, from a cosy family dinner to a festive gathering, Shepherd’s Pie is not only delicious but also a wonderful way to use up leftovers. Ingredients:

  • 1 pound (450g) ground lamb (or beef for Cottage Pie)
  • 1 large onion, finely chopped
  • 2 carrots, peeled and diced
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • 1 cup beef broth
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 pounds (900g) potatoes, peeled and quartered
  • 4 tablespoons butter
  • 1/2 cup milk
  • Salt and pepper to taste

Instructions:

  1. Prepare the Filling:
    1. In a large skillet, brown the ground lamb over medium heat. Once cooked, drain any excess fat.
    2. Add the chopped onion, diced carrots, and minced garlic to the skillet. Cook until the vegetables are softened.
    3. Stir in the tomato paste, Worcestershire sauce, dried thyme, salt, and pepper.
    4. Pour in the beef broth and let the mixture simmer for about 10 minutes, until slightly thickened.
    5. Add the frozen peas and cook for another 2-3 minutes. Set aside.
  2. Prepare the Mashed Potatoes:
    1. While the filling is cooking, place the peeled and quartered potatoes in a large pot. Cover with water and bring to a boil. Cook until the potatoes are tender.
    2. Drain the potatoes and return them to the pot. Add the butter and milk, and mash until smooth. Season with salt and pepper.
  3. Assemble the Shepherd’s Pie:
    1. Preheat your oven to 400°F (200°C).
    2. Spread the meat and vegetable filling evenly in a baking dish.
    3. Spoon the mashed potatoes over the top of the filling, spreading them out to cover the entire surface. You can use a fork to create a decorative pattern on the mashed potatoes.
  4. Bake:
    1. Place the baking dish in the preheated oven and bake for about 25-30 minutes, or until the top is golden brown and the filling is bubbly.
  5. Serve:
    1. Let the Shepherd’s Pie cool for a few minutes before serving. Enjoy!
