Shepherd’s pie

Shepherd’s Pie is a hearty, traditional dish that has warmed the hearts and homes of families for generations. This comfort food classic combines succulent minced meat, often lamb, with a medley of vegetables, all nestled beneath a fluffy layer of creamy mashed potatoes. Ideal for any occasion, from a cosy family dinner to a festive gathering, Shepherd’s Pie is not only delicious but also a wonderful way to use up leftovers. Follow this recipe to create a satisfying, flavourful meal that brings a taste of home to your table.
Ingredients:
- 1 pound (450g) ground lamb (or beef for Cottage Pie)
- 1 large onion, finely chopped
- 2 carrots, peeled and diced
- 2 cloves garlic, minced
- 1 cup frozen peas
- 1 cup beef broth
- 2 tablespoons tomato paste
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 pounds (900g) potatoes, peeled and quartered
- 4 tablespoons butter
- 1/2 cup milk
- Salt and pepper to taste
Instructions:
- Prepare the Filling:
- In a large skillet, brown the ground lamb over medium heat. Once cooked, drain any excess fat.
- Add the chopped onion, diced carrots, and minced garlic to the skillet. Cook until the vegetables are softened.
- Stir in the tomato paste, Worcestershire sauce, dried thyme, salt, and pepper.
- Pour in the beef broth and let the mixture simmer for about 10 minutes, until slightly thickened.
- Add the frozen peas and cook for another 2-3 minutes. Set aside.
- Prepare the Mashed Potatoes:
- While the filling is cooking, place the peeled and quartered potatoes in a large pot. Cover with water and bring to a boil. Cook until the potatoes are tender.
- Drain the potatoes and return them to the pot. Add the butter and milk, and mash until smooth. Season with salt and pepper.
- Assemble the Shepherd’s Pie:
- Preheat your oven to 400°F (200°C).
- Spread the meat and vegetable filling evenly in a baking dish.
- Spoon the mashed potatoes over the top of the filling, spreading them out to cover the entire surface. You can use a fork to create a decorative pattern on the mashed potatoes.
- Bake:
- Place the baking dish in the preheated oven and bake for about 25-30 minutes, or until the top is golden brown and the filling is bubbly.
- Serve:
- Let the Shepherd’s Pie cool for a few minutes before serving. Enjoy!
